Vegan Almond Milk

1 cup almonds
3 - 4 cups water
vanilla extract (optional)

Soak the almonds in the water overnight.
Drain the almonds. Place them into a FP or blender with
half the water and blend for 1 or 2 minutes.Add the remaining
water and vanilla extract. If you like it creamy don't add all the water.
Strain through a sieve pushing with the back of a wooden spoon.
Place into a bottle or airtight container.Store in the fridge for 4 days.
